Chilled Avocado Soup
Ingredients (for 10
Portions):
Ø
6 ripe avocado, peeled, seeded, cut into cubes
Ø
Juice from 2 fresh limes
Ø
1 cup vegetable stock
Ø
Salt, pepper
Ø
Fresh garlic, fresh chili, fresh tomatoes,
fresh bell peppers – all finely chopped
Ø
Fresh cilantro, finely chopped
Preparation:
1) Blend the
avocado with the vegetable stock and lime juice.
2) Season to
taste.
3) Add all
chopped vegetable and the cilantro.
4) May add a
splash of Tabasco for final touch.
